Two Palate Pleasing Recipes

These Pancakes are absolutely to die for! They are yummy on their own or drizzled with a little syrup. It might sound sick, but my family favortie growing up was sour cream with home made jam on waffles and pancakes. Try it... you'll like it!

Sourdough Pancakes
the night before: mix 2 cups of flour and 1 pkg of yeast (1TBS). Add enough water to the mix give a cake batter like thickness. Set on counter until it's breakfast time.
in the morning: mix 1 TBS shortning (melted, cooled), 2 eggs, 1 TBS sugar, 1 tsp soda, 1tsp salt. add into the yeasty mixture. It is a really strange texture, but I promise it is sooooooo good! Makes about a dozen fluffy pancakes.

Fresh Tomato Sauce

This recipe comes from Real Simple. They suggest to have a sauce making party and to assign each person a task to get the sauce complete. Sounds fun! Anywho, the recipe is simple and as mentioned in the last post, it freezes for up to 3 months. We had our first batch for dinner tonight with some meatballs. It was a hit. I halved this recipe easily.

30 pounds of tomatoes ( about 60 med)
4 onions, diced
2 heads of garlic, sliced
1/2 cup olive oil
3 Tbs kosher salt
1 tsp pepper
1 6-ounce can tomato paste
1 bunch fresh basil (The store was out of this so I used 2 Tbs dried basil & 2 Tbs dried oregano)

Prepare tomoatoes by blanching and removing the skins and the seeds. Then coarsely chop.
Heat oil in 2 large pots (9 qts each) over medium heat. Saute onions, garlic, salt, and pepper until tender (10-12 mins). Add tomato paste and tomatoes and cook, stirring occasionally, until sauce has thickened, about 1 hour. Add basil and oregano. Use the sauce immediately or freeze up to 3 months.
